Artichoke and chickpea orzo

Providing artichoke with the appreciation it deserves.

Serves 4

Ingredients

  • 300g Orzo

  • 1 Onion

  • Garlic

  • 350g Jarred Artichoke

  • 1 Tin Chickpeas

  • 2 tbsp Parmesan

  • 50g Spinach

  • 1 tbsp Green Pesto

  • Chilli Flakes

  • 1 Lemon

  • 30g Walnuts

  • Stock cube

  • Basil

Method

  1. Fry the finely chopped onion, garlic and chilli flakes using the oil from the artichokes

  2. Add the orzo, artichokes, chickpeas

  3. Slowly add roughly 750ml water (with stock cube), stirring continuously

  4. Add the pesto, spinach and parmesan

  5. Toast the walnuts in a pan

  6. Zest the lemon and add the zest and juice to the orzo

  7. Serve with the walnuts and basil
