Butter cauliflower

This curry convinced my partner that home cooked curries are good!

Serves 4

Ingredients

  • 1 Cauliflower

  • 0.5 Tin Coconut Milk

  • 1 tsp Apple Cider Vinegar

  • 1 tsp Paprika

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 0.5 tsp Salt

  • 1 Onion, diced

  • 4 Garlic, minced

  • 2 inches Ginger, grated

  • 1 tbsp Garam Masala

  • 2 tsp Curry Powder

  • 0.5 tsp Cayenne Pepper

  • 2 Tin Tomatoes

  • 0.5 Tin Coconut Milk

  • 2 tbsp Sugar

  • Bunch Coriander

Method

  1. In a bowl, mix the coconut milk, vinegar, paprika, garlic powder, onion powder and salt.

  2. Add the cauliflower florets to the marinade, coat and leave for at least 10 mins

  3. Roast for 20 mins

  4. In a pan, fry the onion, garlic and ginger

  5. Stir in the spices. Add the tomatoes and simmer for 5-10 mins

  6. Blitz the sauce into a smooth consistency

  7. Over the heat, add the coconut milk and sugar

  8. Add the cauliflower and simmer for 5 mins

  9. Add the coriander and serve with rice and naan
