Carrot lentil wrap

A super filling lunch that can be made in bulk at the beginning of the week.

Serves 3-4

Ingredients

  • Wraps

  • 1 Onion

  • Garlic

  • 3 Carrots, grated

  • 1 Tin Lentils

  • 1 tsp Paprika

  • 1 tsp Cumin

  • 1 tsp Dried Herbs

  • 2 tbsp Tomato Puree

  • Feta

  • 2 tbsp Yoghurt

  • 2 tbsp Hummus

  • 1 tbsp Sriracha

  • Lime Juice

Method

  1.  Fry the onion, garlic and grated carrot

  2. Add the lentils, tomato puree and spices

  3. Mix the sauce ingredients together

  4. Assemble wrap with the sauce and lentil mix, top with feta
