Cauliflower and lentil curry
This curry is super creamy and delicate. My partner claims to not enjoy home made curries, but this one changed his opinion.
Serves 4
Ingredients
1 Cauliflower head
1 tbsp Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Paprika
Salt
Pepper
Rice
1 Onion
3 Garlic Cloves
1 tbsp Curry Powder
1.5 tsp Garam Masala
1.5 tsp Turmeric
1 tsp Cumin
1 tsp Coriander
1 tsp Ground Cinnamon
1 tsp Salt
1 Tin Tomatoes
10 Cherry Tomatoes
1 Tin Coconut milk
1 Tin Cooked Lentils
60g Spinach
Method
Bake the cauliflower, tossed in the oil and spices, for 40-45 mins (210°C)
Cook the rice
Fry the onion, then add the garlic and spices
Add the tomatoes (tinned and fresh) and simmer for 5 mins
Add the coconut milk, lentils, spinach and roasted cauliflower. Cook for 5-10 mins
