Cauliflower and lentil curry

This curry is super creamy and delicate. My partner claims to not enjoy home made curries, but this one changed his opinion.

Serves 4

Ingredients

  • 1 Cauliflower head

  • 1 tbsp Oil

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 1/2 tsp Paprika

  • Salt

  • Pepper

  • Rice

  • 1 Onion

  • 3 Garlic Cloves

  • 1 tbsp Curry Powder

  • 1.5 tsp Garam Masala

  • 1.5 tsp Turmeric

  • 1 tsp Cumin

  • 1 tsp Coriander

  • 1 tsp Ground Cinnamon

  • 1 tsp Salt

  • 1 Tin Tomatoes

  • 10 Cherry Tomatoes

  • 1 Tin Coconut milk

  • 1 Tin Cooked Lentils

  • 60g Spinach

Method

  1.  Bake the cauliflower, tossed in the oil and spices, for 40-45 mins (210°C)

  2. Cook the rice

  3. Fry the onion, then add the garlic and spices

  4. Add the tomatoes (tinned and fresh) and simmer for 5 mins

  5. Add the coconut milk, lentils, spinach and roasted cauliflower. Cook for 5-10 mins
