Scrambled chickpea pitas

A simple lunch that can be made in bulk.

Serves ~5-6

Ingredients

  • 1.5 Tin Chickpeas

  • 1 Onion

  • 2 Red Peppers

  • 2½ tsp Cumin

  • 2 tsp Turmeric

  • 1 tsp Garlic Powder

  • Spinach

  • 6 Pitas

Method

  1. Blitz half the chickpeas until broken but not pureed (or mash with fork)

  2. Fry the onions – stir in the peppers, cumin, turmeric, garlic and season

  3. Add the mashed and whole chickpeas

  4. Stir in the spinach

  5. Serve in the pitas
