Scrambled chickpea pitas
A simple lunch that can be made in bulk.
Serves ~5-6
Ingredients
1.5 Tin Chickpeas
1 Onion
2 Red Peppers
2½ tsp Cumin
2 tsp Turmeric
1 tsp Garlic Powder
Spinach
6 Pitas
Method
Blitz half the chickpeas until broken but not pureed (or mash with fork)
Fry the onions – stir in the peppers, cumin, turmeric, garlic and season
Add the mashed and whole chickpeas
Stir in the spinach
Serve in the pitas
