‘Moroccan’ chickpea stew

Contrary to popular belief, raisins and sultanas are not the devil.

Serves 4-6

Ingredients

  • 3 Garlic

  • 1 Red Onion

  • 1 Courgette

  • 1 Carrot

  • 1 Sweet Potato

  • 2 Tin Tomato

  • 2 Tin Chickpeas

  • 200ml Stock

  • 100g Raisins or Sultanas or Dates (chopped)

  • 1 tbsp Cumin

  • 1/2 tbsp Ground Coriander

  • 1 tbsp Cinnamon

Method

  1. Fry the garlic, onion, courgette and carrot for 10 mins

  2. Add the spices and stir until fragrant

  3. Add the sweet potato and chickpeas (with the water from the tins)

  4. Add the tomatoes, stock and raisins. Stir altogether, put a lid on and simmer for 40 mins

  5. Serve with fresh coriander, yoghurt and rice
