Coconut dahl

Poached eggs are a perfect addition to this coconut dahl

Serves 4

Ingredients

  • 1 Onion

  • 3 Garlic

  • 1.5 Cup Red Lentils

  • 2 tbsp Tomato Puree

  • 2 tbsp Curry Powder

  • 1.25l Stock

  • 200ml Coconut milk (Tin)

  • 150g Spinach

  • 4 Eggs

  • Bunch of Coriander

Method

  1. Fry the onion and garlic, then add the tomato puree, curry powder and lentils and stir through

  2. Add the stock and simmer for 20-25 mins, stirring often

  3. Add the coconut milk and spinach, and crack the eggs into the dahl

  4. Put a lid on and steam the eggs for 6-7 mins

  5. Serve with the coriander
