Coconut dahl
Poached eggs are a perfect addition to this coconut dahl
Serves 4
Ingredients
1 Onion
3 Garlic
1.5 Cup Red Lentils
2 tbsp Tomato Puree
2 tbsp Curry Powder
1.25l Stock
200ml Coconut milk (Tin)
150g Spinach
4 Eggs
Bunch of Coriander
Method
Fry the onion and garlic, then add the tomato puree, curry powder and lentils and stir through
Add the stock and simmer for 20-25 mins, stirring often
Add the coconut milk and spinach, and crack the eggs into the dahl
Put a lid on and steam the eggs for 6-7 mins
Serve with the coriander
