Courgette and sweetcorn pasta

Grated courgette = perfection.

Serves 4

Ingredients

  • 4+ Garlic, thinly sliced

  • 680g Courgette, grated

  • Sweetcorn

  • 70g Parmesan

  • 2 tbsp Butter

  • 350g Pasta

  • 120ml Double Cream

Method

  1.   Melt the butter and add the garlic

  2.   Add the courgette, ¾ corn and season

  3.   Cook for~20 mins – add splash of water if veg starts to stick

  4.   Cook the pasta, save some pasta water

  5.   Add the cream to the courgette – 3/5 mins

  6.   Add the parmesan

  7.   Add the pasta and remaining corn to the sauce
