Courgette and sweetcorn pasta
Grated courgette = perfection.
Serves 4
Ingredients
4+ Garlic, thinly sliced
680g Courgette, grated
Sweetcorn
70g Parmesan
2 tbsp Butter
350g Pasta
120ml Double Cream
Method
Melt the butter and add the garlic
Add the courgette, ¾ corn and season
Cook for~20 mins – add splash of water if veg starts to stick
Cook the pasta, save some pasta water
Add the cream to the courgette – 3/5 mins
Add the parmesan
Add the pasta and remaining corn to the sauce
