Feta tomato chickpeas
This meal is rich and tangy - it just hits the spot
Serves 2
Ingredients
1 Red Onion
3 Garlic
1 tsp Dried Parsley
300g Cherry Tomatoes, whole
50g Black Olives
50g Tomato Puree
20ml Balsamic Vinegar
2 Tin Chickpeas
60g Feta
Dill
Method
Fry the onion and garlic for 5 mins, then add the parsley
Add the tomatoes and cover with a lid for 10 mins
Crush the some of the tomatoes with the back of a spoon, add the chickpeas and olives
Cover and leave for 5 mins
Add the tomato puree and balsamic vinegar
Serve with crumbled feta, dill and your favourite bread
