Feta tomato chickpeas

This meal is rich and tangy - it just hits the spot

Serves 2

Ingredients

  • 1 Red Onion

  • 3 Garlic

  • 1 tsp Dried Parsley

  • 300g Cherry Tomatoes, whole

  • 50g Black Olives

  • 50g Tomato Puree

  • 20ml Balsamic Vinegar

  • 2 Tin Chickpeas

  • 60g Feta

  • Dill

Method

  1. Fry the onion and garlic for 5 mins, then add the parsley

  2. Add the tomatoes and cover with a lid for 10 mins

  3. Crush the some of the tomatoes with the back of a spoon, add the chickpeas and olives

  4. Cover and leave for 5 mins

  5. Add the tomato puree and balsamic vinegar

  6. Serve with crumbled feta, dill and your favourite bread
