Goats cheese and tomato pasta

No need for goats cheese to be scary

Serves 2

Ingredients

  • 200g Kale

  • 1 Onion

  • 3 Garlic

  • 50g Sundried Tomatoes

  • 50g Black Olives

  • 2 tbsp Tomato Puree

  • 75g Goats Cheese

  • Tagliatelle

Method

  1. Fry the onion and garlic for 5 mins, then add the tomatoes and olives and fry for 5 more mins

  2. Add the kale and cook until it softens

  3. Cook the pasta in parallel and reserve a cup of pasta water

  4. Add the tomato puree once the kale has softened, stir through and cook for a few mins

  5. Add the goats cheese, stir through and take off the heat

  6. Season, add the pasta and pasta water (slowly until a nice glossy consistency)
