Goats cheese and tomato pasta
No need for goats cheese to be scary
Serves 2
Ingredients
200g Kale
1 Onion
3 Garlic
50g Sundried Tomatoes
50g Black Olives
2 tbsp Tomato Puree
75g Goats Cheese
Tagliatelle
Method
Fry the onion and garlic for 5 mins, then add the tomatoes and olives and fry for 5 more mins
Add the kale and cook until it softens
Cook the pasta in parallel and reserve a cup of pasta water
Add the tomato puree once the kale has softened, stir through and cook for a few mins
Add the goats cheese, stir through and take off the heat
Season, add the pasta and pasta water (slowly until a nice glossy consistency)
