Grilled veg paella
This paella is baked to give a beautifully crispy topping.
Serves 4
Ingredients
2 Onions
1 Pepper
1 Courgette
Garlic
1 tbsp Sundried Tomato Puree
300g Paella Rice
850ml Veg Stock
100g Chargrilled Artichokes
75g Olives
75g Tomatoes
Method
Fry onions, peppers, courgette and garlic
Add tomato puree and rice
Add stock, artichoke, olives and tomatoes
Oven (180°) for 45mins/until rice cooked
