Grilled veg paella

This paella is baked to give a beautifully crispy topping.

Serves 4

Ingredients

  • 2 Onions

  • 1 Pepper

  • 1 Courgette

  • Garlic

  • 1 tbsp Sundried Tomato Puree

  • 300g Paella Rice

  • 850ml Veg Stock

  • 100g Chargrilled Artichokes

  • 75g Olives

  • 75g Tomatoes

Method

  1.   Fry onions, peppers, courgette and garlic

  2.   Add tomato puree and rice

  3.   Add stock, artichoke, olives and tomatoes

  4.   Oven (180°) for 45mins/until rice cooked
