Lasagne

Hearty, warming, winter favourite.

Serves 6

Ingredients

Tomato sauce

  • 1 Onion

  • 1 Aubergine

  • 1 Courgette

  • 1 Red Pepper

  • 250g Mushrooms

  • Garlic

  • 100g Lentils

  • 2 Tins Tomatoes

  • Mixed Herbs

  • 1tsp Sugar

  • 1 Veg Stock Cube

  • 150g Spinach

  • Lasagne sheets

White sauce

  • 100g Flour

  • 800ml Milk

  • Cheese

  • 1 Bay Leaf

  • Nutmeg

Method

  1.   Fry the onion, add the veg

  2.   Add the garlic

  3.   Stir in the lentils, tomatoes, mixed herbs, sugar, stock cube and a tin of water

  4.   Simmer for 15 mins

  5.   Add the spinach

  6.   Make the white sauce: add flour to oiled pan, add milk, cheese, bay leaf and nutmeg

  7.   Layer up the lasagne

  8.   Bake (180°C) for 35-40 mins
