Lasagne
Hearty, warming, winter favourite.
Serves 6
Ingredients
Tomato sauce
1 Onion
1 Aubergine
1 Courgette
1 Red Pepper
250g Mushrooms
Garlic
100g Lentils
2 Tins Tomatoes
Mixed Herbs
1tsp Sugar
1 Veg Stock Cube
150g Spinach
Lasagne sheets
White sauce
100g Flour
800ml Milk
Cheese
1 Bay Leaf
Nutmeg
Method
Fry the onion, add the veg
Add the garlic
Stir in the lentils, tomatoes, mixed herbs, sugar, stock cube and a tin of water
Simmer for 15 mins
Add the spinach
Make the white sauce: add flour to oiled pan, add milk, cheese, bay leaf and nutmeg
Layer up the lasagne
Bake (180°C) for 35-40 mins
