Cod with mushroom and leek orzo

In my old flat this was our fancy meal. Reserved for birthdays and occasions.

Serves 4

Ingredients

  • 4 Cod

  • Lemon

  • Thyme

  • 2 Leeks

  • 200g Mushrooms

  • 300g Orzo

  • 500ml Stock

  • 2 tbsp Crème Fraiche

Method

  1. Bake the cod (200°C) for 10 mins with slices of lemon and some thyme

  2. Fry the leeks and mushrooms

  3. Add orzo and stock, until orzo cooked

  4. Stir through crème fraiche

  5. Serve orzo with cod on top
