Mushroom and lentil ragu

A hearty dish that will satisfy any pasta cravings.

Serves 2-3

Ingredients

  • Pasta

  • 300g Chestnut Mushrooms

  • 1 Onion

  • Garlic

  • 40g Walnuts

  • 7 Sun-dried Tomatoes

  • 1 tsp Smoked Paprika

  • 1 tbsp Tomato Puree

  • 300g Tin Lentils

  • 1 Tin Tomatoes

Method

  1. Finely dice the mushrooms and onions and fry them for 10 mins

  2. Mince the garlic and finely chop the sun-dried tomatoes. Add them and the smoked paprika to the pan

  3. Add the tomato puree

  4. Add the tomatoes, lentils, walnuts and season

  5. Simmer the sauce whilst cooking the pasta (save some pasta water)

  6. Add the pasta to the sauce and add some pasta water to loosen
