Mushroom and spinach pasta

Serves 2-3

Toasted walnuts are so warming.

Ingredients

  • 400g Fresh Pasta

  • 200g Cream/Creme Fraiche

  • 150g Mushrooms

  • Vegetable stock cube

  • 1 Onion

  • 1 Tomato

  • 20g Walnuts

  • 1-2 Red Chillies

  • Garlic

  • Paprika

  • 100g Spinach

Method

  1. Toast the walnuts in a dry pan for 3-5 mins. Roughly chop them once they have cooled

  2. In the same pan, fry the pasta for ~5 mins (until lightly crispy) then set aside

  3. Fry the mushrooms, onion, garlic and chilli

  4. Add the cream and vegetable stock cube

  5. Add the pasta, tomatoes and paprika

  6. Stir in the spinach
