Pad thai

The classic Pad thai.

Serves 2

Ingredients

  • Rice Noodles

  • 1½ tbsp tamarind puree (or lime juice and brown sugar)

  • 3 tbsp Brown Sugar

  • 2 tbsp Fish Sauce

  • 1½ tbsp Oyster Sauce

     

  • Onion

  • Garlic

  • ~120g Prawns

  • 2 Eggs

  • Beansprouts

  • Peanuts

Extras:

  • Pak Choi

  • Tofu

Method

  1.   Put the noodles in a bowl of boiling water for 5 mins

  2.   Mix the sauce ingredients in a bowl

  3.   Fry the garlic and onions

  4.   Push them to one side of the pan and scramble the eggs

  5.   Add beansprouts, noodles, prawns and sauce

  6.   Add peanuts
