Pasta and bean stew

Is it soup? Is it a stew? Either way, it’s delicious.

Serves 4

Ingredients

  • 1 Onion

  • 1 Carrot

  • 1 Celery Stick

  • 1/4 White Cabbage

  • Garlic

  • 2 tbsp Tomato Puree

  • 1 tbsp Dried Oregano

  • 1 tbsp Smoked Paprika

  • 1 tsp Chilli Flakes

  • 700g Beans

  • 1 Tin Tomatoes

  • 1 litre Veg Stock

  • 150g Small Pasta

  • Basil

  • 2 tbsp Nutritional Yeast

Method

  1. Fry the onion, carrot and celery until softened

  2. Add the garlic and fry until fragrant

  3. Add the tomato puree, oregano, paprika and chilli flakes

  4. Add the beans, tomatoes, stock and season

  5. Simmer for 10-15 mins

  6. Add the pasta and cook until al dente, then add the cabbage and nutritional yeast

  7. Serve with the basil and fresh bread
