Pesto Butterbeans

You’ll be surprised at how easy this tasty meal comes together

Serves 3-4

Ingredients

  • 1 Leek

  • Garlic

  • 1 Courgette

  • Chilli Flakes

  • 1.5 Tin Butterbeans + 90ml Bean Liquid

  • 0.5 Tin Butterbeans + 120ml Bean Liquid

  • 15g Basil

  • 2 tbsp Nutritional Yest

  • 2 tbsp Tahini

  • 0.5 Lemon, Juiced

  • Bread

Method

  1. Fry the leek, garlic, courgette and chilli flakes until softening

  2. Blitz up the sauce ingredients

  3. Pour the sauce into the pan, and cook for 5-10 mins

  4. Serve with toasted, buttered bread
