Pesto Butterbeans
You’ll be surprised at how easy this tasty meal comes together
Serves 3-4
Ingredients
1 Leek
Garlic
1 Courgette
Chilli Flakes
1.5 Tin Butterbeans + 90ml Bean Liquid
0.5 Tin Butterbeans + 120ml Bean Liquid
15g Basil
2 tbsp Nutritional Yest
2 tbsp Tahini
0.5 Lemon, Juiced
Bread
Method
Fry the leek, garlic, courgette and chilli flakes until softening
Blitz up the sauce ingredients
Pour the sauce into the pan, and cook for 5-10 mins
Serve with toasted, buttered bread
