Puttanesca gnocchi

Always boil the gnocchi first - I learnt from experience.

Serves 4

Ingredients

  • 2 Tins Tomatoes

  • Onion

  • Garlic

  • 1 tsp Chilli Flakes

  • 1 tbsp Capers

  • 60g Olives (Kalamata)

  • 5 Anchovy Fillets

  • Pinch of Sugar

  • 500g Gnocchi

  • Mozzarella

Method

  1. Blitz one can of tomatoes until smooth – set aside

  2. Heat the onion and garlic

  3. Add the chilli and all of the tomatoes – simmer 10 mins

  4. Add ¼ tin of water

  5. Add capers, olives and anchovies – season and add sugar

  6. Boil the gnocchi for 2 mins – add to tomato sauce into an oven proof dish

  7. Tear mozzarella over the top and grill for 3-4 mins
