Red lentil pasta

Simple yet effective.

Serves 6

Ingredients

  • Onion

  • Garlic

  • Tin Tomatoes

  • Diced Tomatoes

  • 180g Red Lentils

  • 1 tsp Basil

  • 1 tsp Oregano

  • Cheese

  • 450ml Veg Stock

  • Pasta

Method

  1.   Cook the pasta

  2.   Fry the onion and garlic

  3.   Add the tomatoes, lentils, herbs, cheese and stock

  4.   Simmer until lentils are cooked

  5.   Add the pasta

  6. Serve with fresh basil and parmesan
