Spinach, leek and pea frittata

It may seem like a lot of eggs, but its worth it.

Serves 4

Ingredients

  • 2 Leeks

  • 100g Spinach

  • 150g Peas

  • 10 Eggs

  • 100ml Milk

  • Basil

  • Feta

Method

  1.   Fry the leeks in a nob of butter

  2.   Add the spinach and peas

  3.   Whisk the eggs and milk together and add the veg pan with the basil

  4.   Bake for 20-25 mins (160°C)
