Squash and spinach gnocchi

Impress with this oozy dish.

Serves 2-3

Ingredients

  • 600g Butternut Squash

  • Garlic

  • 160g Spinach

  • 250g Mascarpone

  • Nutmeg

  • 30g Parmesan

  • 500g gnocchi

  • 3 tbsp breadcrumbs

Method

  1. Roast the squash for around 25 mins or until it is soft

  2. Fry the garlic, add the spinach and cook until wilted

  3. When the squash is tender, roughly mash half of it with a fork

  4. Stir the mashed squash and mascarpone into the spinach and add 150ml of water

  5. Add a generous grating of nutmeg and half the parmesan

  6. Stir in the gnocchi (cook first if dried) and squash chunks

  7. Transfer to a heatproof dish and top with breadcrumbs and remaining parmesan

  8. Grill until golden
