Squash and spinach gnocchi
Impress with this oozy dish.
Serves 2-3
Ingredients
600g Butternut Squash
Garlic
160g Spinach
250g Mascarpone
Nutmeg
30g Parmesan
500g gnocchi
3 tbsp breadcrumbs
Method
Roast the squash for around 25 mins or until it is soft
Fry the garlic, add the spinach and cook until wilted
When the squash is tender, roughly mash half of it with a fork
Stir the mashed squash and mascarpone into the spinach and add 150ml of water
Add a generous grating of nutmeg and half the parmesan
Stir in the gnocchi (cook first if dried) and squash chunks
Transfer to a heatproof dish and top with breadcrumbs and remaining parmesan
Grill until golden
