Giant stuffed mushrooms

The quantities have gone awry - but it all depends on how many mushrooms you have to stuff.

Serves… A mushroom per person

Ingredients

  • Large Mushrooms (Portobello)

  • Onions

  • Nutmeg

  • Garlic

  • Halloumi

  • Couple Handfuls of Hazelnuts

  • Bread

  • 1-2 bags Spinach

  • Thyme

  • Vinegar

Method

  1. Peel mushrooms and remove stalk (save bits – finely chop)

  2. Bake mushrooms for 15 mins

  3. Fry garlic, thyme and onions

  4. Add swig of vinegar and nutmeg

  5. Add mushroom peelings/stalks and spinach

  6. Make topping – breadcrumbs (2 slices of bread), crushed hazelnuts and grated halloumi

  7. Once mushrooms are cooked, pour mushroom juices into spinach mix

  8. Pile spinach mix on top of mushrooms and sprinkle topping on top of each

  9. Bake for 15 mins
