Stuffed sweet potato

A warming carby dinner. Adding courgette slices to the stuffing would elevate this dish.

Serves 1

Ingredients

  • 1 Sweet Potato

  • 100g Chickpeas

  • Cherry Tomatoes, Halved

  • 2 Handfuls of Spinach

  • Garlic

  • 1 tsp Cumin

  • 1 tsp Smoked Paprika

  • Red Onion

  • Lemon juice

  • Salt

  • 1 tbsp Tahini

  • Lemon Juice

  • Warm Water

Method

  1. Prick the potato and bake for 30-45 mins

  2. For the stuffing, fry the garlic, then add the tomatoes and spices. Add the spinach and chickpeas until the spinach has wilted

  3. For the topping, thinly slice the red onion and marinate them in lemon juice and salt

  4. For the dressing, mix the tahini with lemon juice and salt. Add warm water to thin as needed
