Sweet potato and tofu wraps

My favourite lunch!

Serves 3

Ingredients

  • 2 Sweet Potatoes

  • Frozen Peas

  • ½ tsp Cumin

  • ½ tsp Coriander

  • ½ tsp Turmeric

  • 1 Onion

  • 325g Smoked Tofu

  • 1 tsp Turmeric

  • 1 tsp Nutritional Yeast Flakes

  • 1 tsp Garlic Powder

  • Wraps

  • Avocado

  • Pepper

Method

  1. Steam the potatoes (10-15 mins)

  2. Fry the onions, crumble the tofu into the pan

  3. Add turmeric, nutritional yeast, garlic, salt and pepper. Cook for 3-5 mins then transfer to a plate

  4. Add the potatoes to the (now empty) frying pan – pan fry and mash the potatoes (1-2 mins)

  5. To the potatoes, add the peas, cumin, coriander, turmeric, salt and pepper

  6. Assemble wraps with potato filling, tofu scramble, avocado and pepper
