Sweet potato and tofu wraps
My favourite lunch!
Serves 3
Ingredients
2 Sweet Potatoes
Frozen Peas
½ tsp Cumin
½ tsp Coriander
½ tsp Turmeric
1 Onion
325g Smoked Tofu
1 tsp Turmeric
1 tsp Nutritional Yeast Flakes
1 tsp Garlic Powder
Wraps
Avocado
Pepper
Method
Steam the potatoes (10-15 mins)
Fry the onions, crumble the tofu into the pan
Add turmeric, nutritional yeast, garlic, salt and pepper. Cook for 3-5 mins then transfer to a plate
Add the potatoes to the (now empty) frying pan – pan fry and mash the potatoes (1-2 mins)
To the potatoes, add the peas, cumin, coriander, turmeric, salt and pepper
Assemble wraps with potato filling, tofu scramble, avocado and pepper
