Thai red curry

An easy, creamy curry loaded with tofu and veggies.

Serves 4

Ingredients

  • 2 Onions

  • Garlic

  • 1 Sweet Potato

  • 3 tbsp Thai Red Curry Paste

  • 180 ml Water

  • 200g Rice

  • 350g Tofu

  • 2 Red Peppers

  • 1 Broccoli

  • 1 Tin Coconut Milk

  • 1 tbsp Soy Sauce

  • 1 tsp Sriracha

  • 3 tbsp Cashews

Method

  1. Fry the onions, then add the garlic

  2. Add the potatoes (cubes) and curry paste

  3. Add the water and simmer for 15 mins

  4. Cook the rice

  5. Add the remaining ingredients to the curry and simmer for 8-10 mins

  6. Serve with the rice, and top with cashews
