Tofu and chickpea smash wraps

A protein rich, tasty lunch

Serves 3-4

Ingredients

  • Smoked Tofu

  • 2 Tins Chickpeas

  • 4 Spring Onions

  • 3 tbsp Tahini

  • 2 tbsp Mustard

  • 2 tbsp Sundried Tomatoes + 1 tbsp oil

  • 3 tbsp Parsley

  • 1 Lemon, Juiced

  • 80g Cashews

  • 3 tbsp Nutritional Yeast

  • 1 Lemon, Juiced

  • 1-2 Garlic cloves

  • 40ml Water

  • Wraps

  • Lettuce

  • Tomatoes

  • Avocado

Method

  1. Combine all of the chickpeas smash ingredients and mash with a fork or masher. Leaving some chickpeas whole gives a nice texture

  2. Blitz the cashew cream ingredients, adding the water until the consistency is thick and pourable

  3. Slice the salad bits and tofu

  4. Assemble your wrap

Try as a pita or a sandwich on toasted sourdough bread!
