Tofu and chickpea smash wraps
A protein rich, tasty lunch
Serves 3-4
Ingredients
Smoked Tofu
2 Tins Chickpeas
4 Spring Onions
3 tbsp Tahini
2 tbsp Mustard
2 tbsp Sundried Tomatoes + 1 tbsp oil
3 tbsp Parsley
1 Lemon, Juiced
80g Cashews
3 tbsp Nutritional Yeast
1 Lemon, Juiced
1-2 Garlic cloves
40ml Water
Wraps
Lettuce
Tomatoes
Avocado
Method
Combine all of the chickpeas smash ingredients and mash with a fork or masher. Leaving some chickpeas whole gives a nice texture
Blitz the cashew cream ingredients, adding the water until the consistency is thick and pourable
Slice the salad bits and tofu
Assemble your wrap
Try as a pita or a sandwich on toasted sourdough bread!
