Tomato and chickpea stew

This stew changed my view on a stew. It is warming and comforting.

Serves 4

Ingredients

  • 4 Garlic Cloves

  • 2 Onions

  • 1 Chilli

  • 1 Carrot (finely chopped)

  • 1 Red Pepper

  • 2 tsp Cumin

  • 1 tsp Paprika

  • 1 tsp Ground Coriander

  • 2 Tins Tomatoes

  • 1 Tin Chickpeas

  • 70g Olives (Chopped)

  • 2 tbsp Tahini

  • 2 tsp Soy Sauce

  • 60g Spinach

  • Pitas

Method

  1. In a pan, cook the garlic, onion, chilli, carrot and pepper for 5 mins

  2. Add the spices

  3. Add the tomatoes, chickpeas, olives, tahini and soy sauce. Cook for 5-10 mins

  4. Add the spinach

  5. Serve with toasted pitas
